The idea for Bluto’s stemmed from Chef Rick Gencarelli’s love of cooking over a wood fire, combined with Kurt Huffman’s wife’s Greek roots.  Rick and Kurt iterated on flatbread recipes and variations of meat on sticks for years at staff parties and gatherings before they finally decided it was time to take the leap.  Bluto’s, named after the legendary John “Bluto” Blutarsky, is wood fired and Greek inspired, but definitely not traditional.  Hummus can be served classic or topped with rotating goodies like spiced beef, spring veg, or pork belly.  A twist on an iceberg wedge salad is topped with ranchziki and pita chips.  And don’t forget the flatbread… you might start with one, but you will inevitably find yourself back in line to order another.

The wine team of AlexEli Vineyards, and Joel Gunderson, of Restaurant St. Jack, are following up their wholesale debut with a retail venture, Coopers Hall Winery and Tap Room. Gabriel and Josue Azcorra, the two brothers of Dos Hermanos bakery, have been baking bread for the last 15 years. Originally from Mexico (Merida in the Yucatan), they spent the bulk of their recent careers at Delphina’s Bakery prior to joining the ChefStable family in early 2017.

Dos Hermanos truly is a family business, with Gabe and Josue’s dad and extended family all taking part in the operation of the bakery.  Dos Hermanos focuses on wholesale production, making about 14,000 pieces of bread a week for customers all over Portland. The roster includes many restaurants, both part of ChefStable and outside the group, as well as on the shelves at New Seasons Market. 

Having recently expanded to their new space in inner Southeast Portland, Dos Hermanos Cafe is now open for business to the public and is selling freshly baked pastries, conchas, and breads, alongside hearty chopped sandwiches served on their fresh baguette and delicious coffee from locally-roasted Tostado Coffee.
